I’ll be honest – come September, I get a little bit crazy. Gone are the calm days of summer when, throwing a couple of skewers of chicken and a bunch of veggies on the grill, clubbed with a huge side salad and some warm pita bread made for a perfectly well-balanced family dinner.
Once it’s back-to-school, back-to-3-times-a-week-soccer-practices, homework-and-quizzes, and not to mention, what-should-I-pack-for-school-lunch-tomorrow time, I’m at my wit’s end. Come dinner time, I’m so close to putting a loaf of bread and a tub of butter on the table and calling it a night! Which is why having a few tricks up my sleeve for easy weeknight dinners ideas does wonders for my sanity.
Here are 5 recipes that are simple, quick and sure to be a hit with everyone at the table – perfect for easy weeknight dinners:
Masala Egg Burji in Buns
Masala Egg Burji is India’s answer to scrambled eggs and is what I often fall back on when I need a quick, nutritious and tasty meal on the table in a hurry. It goes great with toast, buns or even rotis and parathas.
Peanut Noodles
Set the noodles to boil while the sauce warms up in the microwave and the veggies are being chopped. The leftovers make a great meal served cold or room temperature.
Chicken Fried Rice
This is a wonderful way to use up the little bits of leftover chicken. If you don’t have any leftover chicken, then feel free to use one that’s store-bought or simply roast one chicken breast in the oven that’s been lightly seasoned with some salt, pepper and garlic powder. If you prefer vegetarian, then, by all means, leave it out – the dish will still be finger-licking’ good!
Mushroom & Peas Pulao
This recipe is quite easy to prep and quick to cook. You can also add in whatever veggies you have on hand.
Tadka Dal
Dal is super simple to cook (it literally cooks itself in the pressure cooker!) and makes a perfectly balanced meal served alongside some rice and a salad. It’s my go-to at least once a week!
