    Spiced Grilled Corn - Indian-style (Bhutta)

    It's been a hot minute since I popped in here and shared. And boy, do I have news to share! If you follow me on my social media like Instagram and Facebook, then you probably already know what I'm about to say. If not, then why? Jokes apart, let me start off by offering you these lip-smacking Indian-style Spiced Grilled Corn or Bhutta, as we call them in India. The weather's turned much warmer here in Toronto and I don't know anyone who can turn down a fresh batch of warm grilled corn!

    Now onto my big news - I've written my THIRD cookbook! I still can't believe it, but I've just finished the first phase of editing and can't wait to get into the designing phase in a few weeks. It's called 'Instant Pot Vegan Indian Cookbook' and should be out sometime in late September of this year. The cookbook will have over 75 Instant Pot plant-based recipes, ranging from various types of Dals, Curries, Pulaos, Sabzis, and not to mention, Desserts as well! It was so much fun to create these recipes, and I really hope you will enjoy cooking and eating them as much as I did.     Another piece of news I want to share is the icing on the cake - we're moving! We just bought a new house in a gorgeous neighborhood that comes with the kitchen of my dreams! A large gas range, double ovens, and a big island to seat friends and family who I can feed till they can eat no more! I'll miss my current kitchen, which helped me create so many memories and recipes - especially all the ones in the new cookbook. But I'm so excited to step into the new kitchen and call it home. I've got a ton of ideas and future plans for this blog, and I can't wait to get started! I hope you will all continue to follow me on my kitchen adventures, just as you have over the last 15 years.

    I've been waiting to share this Indian-style Spiced Grilled Corn recipe with you - Bhutta is one of my absolute favourite ways to eat fresh corn in the summer. All you need is a strong flame and a handful of spices from your pantry, and voila! You're in for a treat. Serve this at your next BBQ meal, either paired with grilled meat or veggies, and I promise you'll come back for seconds.

    Spiced Grilled Corn - Indian-style (Bhutta)

    Ingredients

    • 1 tablespoon chaat masala
    • ½ teaspoon red chilli powder
    • 1 teaspoon cumin powder
    • 4 medium-sized fresh corn on the cob husks removed
    • 1 lime cut into wedges
    • finely chopped fresh cilantro for garnish

    Instructions

    • Mix the spices in a small bowl and set aside.
    • Grill the corn on a open flame on all sides, till you get a light char and the corn is roasted through.
    • Sprinkle over with the spice mix generously on all sides and top with a squeeze of fresh lime juice. Garnish with fresh cilantro and enjoy!
