CHICKEN FRIED RICE

Ingredients

  • 2 tbsp cooking oil
  • 1 tbsp minced garlic
  • 1 tsp minced ginger
  • 1 small onion finely chopped
  • 1/2 tsp white pepper
  • 1/2 tsp red chilli powder
  • 1 cup finely chopped carrots
  • 2 cups shredded cabbage
  • 2 cups shredded chicken
  • 1 cup frozen peas thawed
  • salt to taste
  • 4 cups cooked plain rice
  • 2 tbsp light soy sauce
  • freshly cracked black pepper to taste

Instructions

  • Heat oil in a large non-stick pan and fry garlic, ginger and onions till lightly browned and fragrant. Add in white pepper and chilli powder, and fry for a few seconds.
  • Add in carrots and cabbage, and stir-fry for 2-3 minutes. Mix in chicken and peas, season with salt, and stir-fry for another minute or two.
  • Add in rice and mix well. Splash soy sauce and stir-fry rice till everything is mixed well.
  • Season with pepper and serve warm.

Notes

Make this a complete meal by serving it alongside some Chilli Chicken and Spring Rolls.
