1. Deep fry the potatoes until crispy and cooked through. Set aside.

2. Saute ginger, garlic, onions and peppers. until the onions start to lightly brown.

3. Add in the spices, soya sauce and salt, and mix well.

4. Toss in the fried potatoes and stir-fry to combine well with the sauce.

5. Garnish with chopped green onions and serve.
