Dry Aloo Sabzi/Sukhe Aloo (Simple Sauteed Potatoes)

  • 2 tablespoon light cooking oil
  • 1 teaspoon whole cumin seeds
  • 4 medium-sized potatoes boiled, peeled and cut into cubes
  • ½ teaspoon red chilli powder
  • 1 tablespoon coriander powder
  • 1 teaspoon amchoor powder
  • salt to taste
  • a handful of fresh cilantro finey chopped, for garnish


  • Heat oil in a large non-stick pan on medium-high heat and add in the cumin seeds. As soon as they start to sizzle, add in the cubed potatoes and stir-fry for a minute or two.
  • Add in the spices and salt, give it good mix and let it fry for another 5-6 minutes until the potatoes start to crisp along the edges.
  • Garnish with fresh cilantro and enjoy!
