Matar Poha
1. Heat oil and add in mustard seeds. Once they start to pop, add in curry leaves and peanuts.

2. Saute for a few seconds before adding in the chopped onion. Fry until it starts to soften and brown along the edges.

3. Add in chopped potatoes and fry until they start to soften.

4. Add in peas, spices and salt, and give it a good mix.

5. Add in the poha, mix well and let it cook until the poha softens.

6. Garnish with fresh cilantro and a generous squeeze of fresh lemon juice.
