Aloo Bhaji
1. Heat oil add in the cumin seeds and garlic cloves. As soon as they begin to sizzle, add in onions, and fry for 2-3 minutes.

2. Mix in the spices, salt and tomato paste, and fry for a few seconds to blend well.

3. Add in chopped tomatoes and cook until the tomatoes soften and start to pulp.

4. Add in the potatoes and water and let it come to a boil.

5. Garnish with freshly chopped coriander leaves and serve immediately.
