Banana Pancake Balls

Ingredients

  • 3 over-ripe bananas mashed
  • 1 egg beaten
  • 1 tbsp sugar
  • 1/2 cup all-purpose flour
  • a pinch of salt
  • oil spray

Instructions

  • Mix mashed bananas, beaten egg and sugar in a bowl and mix well. Add in flour and salt and mix again to a smooth consistency.
  • Heat the Aebleskiver or Appam Pan and spray a light coating of oil. Add in small dollops of the pancake batter into each section.
  • Let the pancakes cook for about a minute or till the corners start to brown, before flipping them. Once the other side is done, take them out and serve warm.
  • If you dont have an Aebleskiver or Appam Pan, then heat a regular non-stick pan and lightly spray it with oil. Add in small dollops of the pancake batter to form mini pancakes.
  • Let the pancakes cook for about a minute or till the corners start to brown, before flipping them. Once the other side is done, take them out and serve warm.

Notes

The only special thing that you'll need for this recipe, is an Aebleskiver Pan or as they call it in India, an Appam Pan.
