BASIL FRIED RICE

Ingredients

  • 2 tbsp cooking oil
  • 1 tbsp minced garlic
  • 1 small onion finely chopped
  • 1/2 cup finely chopped carrots
  • 1/2 cup finely chopped green beans
  • 1 cup shredded cabbage
  • 1/2 tsp white pepper
  • 1/2 tsp red chilli powder
  • 2 cups shredded chicken optional
  • 3 cups cooked plain rice
  • 2 tbsp light soy sauce
  • a big handful of fresh basil roughly torn
  • salt and freshly cracked black pepper to taste

Instructions

  • Heat oil in a large non-stick wok and fry garlic and onions till lightly browned and fragrant.
  • Add in carrots, beans and cabbage, and stir-fry for 2-3 minutes. Add in white pepper and chilli powder, and fry for a few seconds. Mix in shredded chicken and stir-fry for another minute or two.
  • Add in rice and mix well. Splash soy sauce, add in roughly torn basil and stir-fry rice till everything is mixed well.
  • Season with salt and pepper and serve warm.

Notes

Make this a complete meal by serving it alongside some Chilli Chicken and Spring Rolls.
