MUNG BEAN SALAD

Ingredients

  • 1 cup dried mung beans soaked overnight and boiled till cooked through
  • 1 small onion finely chopped
  • 1 large tomato finely chopped
  • 1 medium seedless cucumber finely chopped
  • a handful of fresh cilantro leaves finely chopped
  • 1/4 tsp red chilli powder
  • 1/2 tsp cumin powder
  • 1 tsp chaat masala powder
  • 2-3 tbsp fresh lemon juice
  • salt & pepper to taste

Instructions

  • Mix all ingredients together in a large bowl and serve.
