Low-fat Methi Matar Malai (Creamy Peas with Fenugreek Leaves)

- 2 tbsp light cooking oil
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 medium-sized onion thinly sliced
- 4 cups fresh fenugreek leaves roughly chopped
- salt to taste
- 1/4 tsp red chilli powder
- 1/2 tsp coriander powder
- 1/4 tsp garam masala
- 1 cup frozen peas thawed
- 1 cup plain yogurt beaten till smooth
Sauté cumin and coriander seeds in hot oil until they start to sizzle and pop. Add in sliced onions and fry till tender.
Add in fenugreek leaves, and fry for a few minutes until they start to wilt.
Mix in salt and spices, and then add in peas.
Add in the yogurt and stir well for another minute or two, allowing it to simmer for a few minutes.
Serve warm with rotis.
