Tawa Pulao (Indian-style Fried Rice)

Ingredients

  • 3 tbsp light cooking oil
  • 1 medium-sized onion finely chopped
  • 1 tbsp finely chopped garlic
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp pav bhaji masala
  • 1 tbsp tomato paste
  • salt to taste
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas thawed
  • 1/4 cup chopped green bell peppers
  • 3 cups cooked Basmati rice
  • finely chopped fresh cilantro leaves for garnish
  • lime wedges for garnish

Instructions

  • Heat oil in a large non-stick pan and fry onions and garlic until lightly browned and fragrant.
  • Add in all the spices, tomato paste and salt, and fry for a few seconds.
  • Add in the veggies and stir-fry for a few minutes until they start to soften up a bit. Add in rice and mix well.
  • Cook covered on low heat for 2-3 minutes until all the flavours blend in together.
  • Garnish with fresh cilantro leaves and serve warm with a sprinkling of lime juice on top.
