Corn Fried Rice with Shrimp

Ingredients

  • 2 tbsp light cooking oil
  • 2 tbsp finely chopped garlic
  • 1 tbsp finely chopped ginger
  • 1 small-sized onion finely chopped
  • 15-20 small-sized shrimp shelled and deveined
  • 1 cup frozen coen kernels thawed
  • 1 tsp white pepper powder
  • 3 cups cooked plain rice preferably cold or at least room temperature
  • 2 tbsp soy sauce
  • salt and pepper to taste
  • 2 tbsp finely chopped fresh chives for garnish

Instructions

  • Heat oil in a large non-stick pan on medium-high heat and saute garlic, ginger and onions till fragrant and lightly brown.
  • Add in the shrimp, corn and white pepper powder, and stir fry for a couple of minutes until the shrimp cooks through.
  • Add in the rice and soy sauce, give it a good mix and stir-fry for another couple of minutes. Season with salt and pepper and garnish with fresh chives.
  • Serve immediately.
