MONDAY:

{Fried Egg Sambal, Rice & Corn Salad} Mondays generally go by in blur, so I like to plan something that’s quick, simple and still tasty. Egg Sambal is one of Baby Dear’s absolute favourite meals. I can cook this with my eyes closed and one hand tied behind my back, so it’s the perfect dish to set the ball rolling for a great week of meals ahead! This week I’m doing the fried egg version, but if you’re in the want for something even more simpler, then try this boiled egg version instead!

TUESDAY:

{Indian-style Spaghetti and Tossed Salad} I can’t think of anything better than pasta on a weeknight, spaghetti being my favourite! Try this Indianized version that’s lightly spiced and bursting with flavour. Throw in a large tossed salad and some bread on the side, and you’ll have a well-balanced meal ready to be devoured!

{Paneer Burji Sandwiches} I always make extra of this Paneer recipe and save some for sandwiches for lunch the next day.

THURSDAY:

{Chicken Chili with Black Beans and Garlic Bread/Corn Chips} Make a big pot of this delicious Chili to either freeze for later or to save for lunch the next day. I love to slather it over some crusty garlic bread, while Hubby Dear prefers his bowl with a side of corn chips!

{Ginger-Chilli Shrimp, Rice & Mango Salad} If you thought Fridays were an excuse to order in take-out, then think again! This recipe is lip-smacking good and comes together in a jiffy. It’s a perfect meal to plate up and enjoy with the family over a Friday movie night.

Hi Everyone! It’s the week of our Canadian Thanksgiving as well as Baby Dear’s 5th b’day and we couldn’t be more excited! There’s tons to do and lots to still plan, and I have my party planner/home caterer/crazy mom hat on. So without further ado, let’s cut to the chase and see what we’re having this week.

{Thanksgiving Feast} Happy Thanksgiving to all my Canadian readers! We’re having some quiet family time putting together final touches for the big birthday bash for Baby Dear this coming weekend. On the menu tonight will be Tandoori Roast Chicken, Spiced Roast Potatoes, Garlic Naan and Cilantro-Mint Raita, with a side Salad. Recipes will follow soon.

{Curry Noodle Soup} It’s starting to get chilly and I find myself craving a big bowl of Curry Noodles most nights. This one’s simple to make, delicious to slurp and can be customized with any toppings you prefer.

{Basil Chicken Lettuce Wraps, Tofu Satay and Peanut Sauce} I love having my Basil Chicken over crisp, fresh lettuce instead of rice for a lighter Thai-inspired meal. We’ll be gorging on deliciously sinful party food over the weekend, and I think something light and healthy would be nice before we dive in head on!

Hi everyone! It’s business as usual around here. School’s going in full swing, and we’ve kind of settled down to a weekly routine. Between packing lunches, meetings, cooking classes and assignment deadlines, I hardly have much stamina or interest left to plan dinner out, come evening time. Which is why, creating a weekly meal plan helps me a ton! Groceries and food prep are usually done on Fridays and I feel confident and equipped to feed my family tasty, nutritious meals the rest of the week.

{Chicken Noodle Soup} We absolutely love Chicken Noodle Soup and can have it anytime of the year. I have some leftover grilled chicken from the weekend, which I’ll just shred and add in to the soup. This really is the perfect way to ease into the week – simple, quick and delicious!

TUESDAY:

{Dal Makhani with Rice and Vegetable Raita} This dal is super easy and comforting for a busy weeknight. It requires minimal prep and come together in the pressure cooker. I always put on the rice and make the salad/Raita while the Dal is simmering, so that dinner gets done in a flash.

{Nasi Goreng with Fried Eggs} I love one-pot meals that combine grains, veggies and protein all in one, and fried rice is always a winner in our home. This Malay version is my Mom’s speciality and one of Baby Dear’s favourites. I’ll use leftover rice from Tuesday’s dinner (cooked extra intentionally) tons of veggie bits and bobs from the fridge.

{Palak Paneer, Parathas and Salad} We love spinach in any form, and this dish is a definite crowd pleaser. Enough said!

Hi everyone! I hope that you’re enjoying the summer so far and cooking up fabulous meals using all the beautiful fresh produce we currently have around us. We’re just recovering from a wonderfully fun and busy weekend. Back-to-back parties, a lavish dinner Saturday night followed by an impromptu cozy lunch on Sunday, saw me cook up a storm. There’s plenty of leftovers to last us a few meals, so I plan on freezing some for a rainy day. We’ve indulged a bit too much, so are craving some light and simple meals in the days ahead.

{Mushroom & Peas Pilaf with Vegetable Raita} I love one-pot meals that comprise of veggies, protein and grains, all in one go! This pilaf is loaded with mushrooms and peas, and paired with a quick mix veg raita makes for a tasty, completely nutritious meal.

I absolutely love cooking for friends and family, and tend to go a bit crazy with the menu. But it makes me happy, so I’m sticking to it! {Tadka Dal (Lentils) and Alu Palak (Sauteed Spinach & Potatoes with Rotis} We love spinach around here and this simple saute with potatoes and some spices makes for a great side. Add in a bowl of lentils and some Indian bread or rice, and you have a classic home-cooked Indian meal.

{Indian-style Spaghetti with Garlic Bread and Garden Salad} Once in a while, I like to spice up the good ‘ol meat sauce and make this Indian inspired version. We love to have it with some crusty bread and I always thrown in a big bowl of salad; but you can add in a few more veggies and it makes for a prefect one dish dinner.

{Black Bean Chili with Cheddar & Chive Biscuits} We love Chili around here and I often make a quick vegetarian version in the middle of the week. I like to cook my beans from scratch and keep them in baggies in the freezer to whip up quick dinners mid-week. Canned beans will also work in a pinch, just remember to rinse them thoroughly before cooking.

{Chicken Noodle Soup} Nothing welcomes a hectic Monday more than a big bowl of Noodle Soup. Dig in and slurp your way an easy, peaceful dinner!

{Paneer Methi MalaiBharwaan Bhindi and Rotis} I personally love this combo of the mild paneer curry with the tangy sauteed okra, amazing with some fresh hot rotis on the side. If I’m short of time or can’t be bothered toiling over the stove rolling our rotis, then some plain Basmati rice works well too.

WEDNESDAY:

{Grilled Chicken and Pesto Pasta with Roasted Veggies} I generally add in some marinated chicken breasts along with the veggies, in separate trays in the oven at the same time. They cook together and in the meanwhile, I just set the past to boil and cool. The meal comes together in a pinch and dinner is on the table in no time!

{Egg CurryPeas Pulao & Garden Salad} Nothing beats a good curry-rice combo in the middle of the week. For a vegetarian/vegan version, substitute the boiled eggs with some parboiled veggies like potatoes, cauliflower, carrots and green beans.

{Hot & Sour Fish Curry, Garlic Green Beans and Rice} This is another quick and simple-to-make curry that’s absolutely tasty. I just leave my frozen fish fillets to defrost during the day, and when it’s time to get started on dinner – the prep hardly takes any time. The curry simmers while the rice is cooking, and I’ll quickly saute some blanched greens with tons of garlic and dash of spices.

{Lamb with Green Peppers, store-bought Naans & Salad} This dish is great for a Sunday supper to be shared with friends and family. Pair it with some plain rice or store-bought Naans, add in a salad, and you have a wonderful dinner to sit down to – the perfect way to end the week.

Every Thursday night, after I’ve tucked Baby Dear into bed and cleared up the kitchen, I sit down at my desk and meal plan for the coming week. I try and come up with a dinner idea for each day of the week, allowing one day off for either take-out or a meal at a restaurant. Lunches are generally leftovers, and snacks are mainly fruits, cheese & crackers, veggies & dips or any baked goods and other treats we may have on hand for that given week.

Once I know what we’ll be eating during the week that’s to come, I then list out a detailed grocery list. Hubby Dear is off early Monday morning on a week-long business trip. He gets back Friday night and then we all take off on a road trip Saturday morning for the long weekend! I have a busy Monday and Wednesday that’s been booked for cooking and photographing pics for the blog. Our (Baby Dear’s and mine) dinners this wee, needless to say is going to be all over the place.
