Can I substitute something for them or just leave them out (I don't have any; not sure if I can get local)?  How did you make your "spicy side dish of eggplants "?  Also, any ideas on what else to do with biryani mix (aside from the full-version chicken biryani)?

Fenugreek leaves add a very fragrant and warming tone to this dish, but can be surely omitted if not available at hand. I don't believe there is any substitute to it, and you should be able to find it easily at any ethnic Indian grocery store (also under the name of Kasuri Methi).
